Borage is an annual herb. Its leaves and petals can both be eaten. (Leaves can be mildly toxic if eaten raw in large quantities). Used in salads for its cucumber taste. The flower has a sweet, honey flavor and is used to decorate desserts or as a garnish in a drink. Borage is used as an herbal medicine, as well. Borage is a great companion plant for tomatoes, squash and strawberries. Borage attracts bees and other pollinators.
